Egg noodle


Simple and easy homemade noodle:
250gr high protein
3gr salt
95gr egg+water
Turn JYS-N7 to auto mode.

once it's done, cook 1 mins, strain the cooked noodle with ice water then add on olive oil.

Prawn Tofu in veggie garden (my lazy cooking mode)

When I am lazy, I will only cook 1 dish for the day. And everytime I cook, my aim is only 1 which is to cook simple yet healthy
So today I cooked Prawn Tofu in veggie garden.

Let's see what I have for the ingredients:
prawn, 
2 packs of silk tofu, 
1 medium size of bitter gourd
2 medium size of carrot
1/2 red pepper, 
broccoli
2 medium size of tomato

Spices: 
2 cloves garlic
1 onion (sliced)
salt
sugar
soya sauce
fish sauce
pepper

For spices measurement, I use agak2 ratio. ^_^

Steam rainbow roll cake

Steam rainbow roll cake? yes... it is a steam roll cake and it's colorful.

 


I get this recipe from "Langsung Enak" group and the person who create this is "Sif Oi".
Here is the recipe in Indonesian:
Bahan A:
300 gr gula pasir
12 kuning telur
8 putih telur
2 sdt SP/TBM/OVALET

Bahan B, Campur rata semua bahan:
160 gr tepung terigu
40 gr tepung maizena
1 sdt vanili bubuk
1/2 sdt garam
Bahan C:
200 ml minyak sayur
Cara Membuat:
1. Siapkan loyang kotak ukuran 26x26x6 cm, olesi bagian dasar loyang dengan minyak goreng, beri alas kertas roti dan oles kertas roti dengan minyak goreng.
2. Mixer bahan A dengan kecepatan tinggi hingga adonan menjadi putih dan kental. Turunkan kecepatan ke rendah.
3. Masukkan bahan B sedikit demi sedikit hingga habis tetap dengan menggunakan mixer kecepatan rendah.
4. Tuangkan bahan C dan mixer kembali dengan kecepatan rendah hingga adonan benar2 tercampur rata.
5. Bagi adonan menjadi enam bagian dalam mangkok2 kecil, beri pewarna makanan merah, orange, kuning, hijau, biru dan ungu sesuai selera. Makin banyak pewarna, warna akan makin ngejreng.
6. Tuangkan adonan ungu ke loyang, ratakan & kukus selama 10 menit, tuangkan adonan biru, ratakan, kukus lagi, selanjutnya hijau, kuning, orange & merah. Kukus selama 15 menit sampai matang, matikan api, biarkan di klakat selama 10 menit.
7. Keluarkan dari loyang, biarkan dingin. Potong memanjang setebal 1/2cm, olesi selai, gulung rapi. 

And here is the recipe in English:
Ingredient "A":
300gr castor sugar
12 yolk egg
8 white egg
2tsp Ovalet

Ingredient "B": (mixed well)
160gr cake flour
40gr corn flour
1tsp vanilla powder (I change this with vanilla essence 0.5 tsp)
1/2tsp salt

Ingredient "C":
200ml vegetable oil (I use olive oil)

Method:
1. prepare pan 26*26*6cm, grease the base with oil. layer it with baking paper.
2. mix all "A" with high speed until white and thick. Once it's white and tick, lower the speed.
3. pour "B" step by step until all finish (still using low speed).
4. mix in "C" until well mix.
5. divide the batter into 6 (I only use 5 colors). 
6. put first color as the first layer into pan, steam for 10 mins.After 10 mins put another color and steam for another 10 mins. Repeat until all color done. The last color steam 15 mins and leave in the steamer for 10'. 
7. take out from steamer and leave it cool. slice 1/2 cm, put the jam and roll it.

Maya's note: I steam 7 mins for each layer and the last layer 10 mins. The moment it is cooked well, I take out from steamer and slice thinly. If you do it when it's cooled down, it will break the roll.
I use Nutella as the spread instead of jam. My kids love Nutella instead of jam. So it is up to you what spread do you want to put.

Colorful Cotton Cake / Puding Busa



This is the first time I made pudding with white egg. And luckily my kids love it.

The recipe is as following (adapted from Rose Kwan's recipe):
Ingredient A:
10gr agar-agar powder (I use 1 packet of swallow agar-agar)
200ml santan /coconut milk / coconut cream (below there is picture of coconut cream that I use)
300ml fresh milk
70gr sugar

Ingredient B:
4cold white egg
30gr sugar
1tsp lemon juice

Method:
1. Beat (B) until turn white
2. In separate bowl, mix (A) and boil it.
3. Pour hot (A) to (B) and mix well
4. Divide into the number of color you want to create. For my cotton cake, I make 2 color.
 So instead of colorful, I only make white (no color added) and for the brown color I used chocolate powder.
5. Put one color in the mold. Wait until a bit firm. I use fridge to make it firm faster. 
6. Then take it out, and cut section that u want give other color.
7. Now put those cake back into the mold and pour the other color.  

8. Repeat for all colors that you want to make.
9. Chill in the fridge.
Taraaaa ..... It's done

Take note that you need to keep the remaining batter (that has not been pour into mold) hot so that it won't become firm.

Flour type - Segitiga Biru / Cakra / Kunci

I realized recipe from my family or my Indonesian friends sometimes need flour "segitiga biru" or "cakra" or "kunci".

As the place where I live I couldn't find this brand, hence I am searching at Bogasari to find out what this flour is.

From http://www.bogasari.com/produk/informasi-produk.aspx under "Tepung Terigu" section, I got following:

"Ketepatan penggunaan jenis tepung sangat penting dalam pembuatan suatu makanan. Cakra Kembar yang merupakan tepung terigu berprotein tinggi sangat ideal untuk pembuatan roti dan mi. Sedangkan Segitiga Biru yang merupakan terigu berprotein sedang sangat cocok untuk membuat aneka makanan. Untuk membuat produk cake (sponge cake, chiffone cake), biscuit dan wafer paling cocok menggunakan terigu Kunci Biru yang merupakan terigu berprotein rendah. Terigu Lencana Merah cocok digunakan untuk membuat aneka makanan dan jajan pasar."

Allow me to translate to English.

"Accuracy in using the type of flour in making foods is very important. Cakra Kembar is a high-protein flour and ideal for making bread and noodles. While Segitiga Biru is medium-protein wheat that is highly suitable for making meals. To make product cake (such as sponge cake, chiffon cake), biscuit and wafer, is most appropriate to use Kunci Biru flour which is low-protein flour. I found another information at "http://www.bogasari.com/tentang-kami/seputar-tepung-terigu.aspx" as following: "Tepung terigu berprotein 12 %-14 % ideal untuk pembuatan roti dan mie, 10.5 %-11.5 % untuk biskuit, pastry/pie dan donat. Sedangkan untuk gorengan, cake dan wafer gunakan yang berprotein 8%-9%." In English is "Wheat with 12%-14% protein is ideal for bread and noodle, 10.5%-11.5% is ideal for biscuit, partry/pie and donat. While for fritter, cake and wafer use flour with 8%-9% protein."

Fried Breaded Chicken and Chicken Soup

Today's menu is using Chicken as the main ingredients. I made Fried breaded chicken and chicken soup.

Here is the recipe for fried breaded chicken:
Marinate chicken with:
1/4 tsp salt
1/4 tsp sugar
1/8 tsp pepper (my kids dont really like pepper hence I only use a bit, but if you like peppery taste, you can add more)
2 tbsp golden syrup
1/2 tsp five spices

After 1 hour marination, dip the chicken into egg and dash it with bread crumb.

Now it is ready to be fried.
FYI, I use Happycall double pan, for I want to use less oil when frying. The result of frying chicken with Happycall double pan will be different with deep fried.

and here is the recipe for chicken soup:
Ingredients:
2 sliced carrots
16 cooked quail's egg
1 white mushroom flower (soak with water until it expands)
1 dry bean curd (soak with water until it soft)
200gr minced chicken
2cloves garlic
cooking oil to stir fry the garlic
400ml - 500ml water
1/2 tsp salt
1/4 sugar

Method:
1.Stir fry garlic until fragant
2. put in the chicken and stir fry together with garlic
3. put in mush room and bean curd, stir fry for a while
4. put in egg and water
5. add in salt and sugar
6. cook until boil

Cooking time management: While marinating the chicken, I use my time to prep and cook the soup. Once the soup is ready, I fried chicken. 

How to make flower pattern carrot: make a bit slit in each section with a knife. the number of petal is up to you. On this I made 4 petals. Once this is done, slice to the thickness you want.

Pumpkin Bun / Pao / Pau - Bakpao Labu Kuning

Yes I make a pumpkin bun.
I just follow my feeling, i add this and that ingredients and tralaaaaaaaaa ...turn out it'soft and fluffy.

Here is my recipe:
ingredient:
125 gr mashed steam pumpkin
100ml fresh milk (if you steam pumpkin without cover then it will contain more water, hence please reduce the fresh milk to 40ml)
260gr high protein flour (or bread flour)
0.5 tsp baking powder
50gr sugar (I use fine caster sugar)
25gr butter
1/8 tsp salt
6gr yeast

method:
1. steam pumpkin until soft. cool it down and mashed it with spoon. (I use normal spoon for eating as I don't have masher)
2. mix all the dry ingredient with your standing mixer (you can also use hand kneading)
3. add in pumpkin.
4. slowly add your fresh milk until well mix. Note that the dough is a bit sticky.
5. rub your palm with olive oil (you can use any oil) and take the dough and shape it like a ball. Let it rest for 1 hour until the size almost double. Note: I covered with food cloth.
6. After one hour, steam the bun for 20 mins.
voila..... this is the result

My kids love it. Hope you like it too.

Note: if you change the pumpkin with sweet potato, then change the fresh milk to 140ml.

Pizza pizza pizza

Yay... I finally made a pizza.
I have three recipes from following links:

For the start, I try the first recipe first. And the result is as photo below:

Hubby said the bread is fluffy.
In case you need the recipe's ingredient in metric conversion, here i convert it for you:(enough to make 2 pizzas, each about 25.5cm/10 inches):

  • 272gr bread flour
  • 2 tsp sugar
  • 1 tsp instant yeast or active dry yeast
  • 190ml warm water
  • 1 Tbsp olive oil
  • 1 tsp salt
  • 1 Tbsp milk powder, optional - I use my kid's milk powder
For the topping, I use minced meat, sliced carrot, sliced mushroom button, sliced paprika --> stir fry with bbq sauce.
    Scope the topping, place on top of the pizza, add grated cheddar.
      Yummy...
        Will update the post when I tried the other recipe. Stay tune...

            Update on 31 Oct'14:
              I have tried 2nd and 3rd recipe and it is also taste good.


                But personally I like the 1st recipe because the 1st recipe resulted more fluffy bread.
                So which recipe is best for you? It is up to your taste bud :)

                Chocolate chewy cookies

                Been long time want to try baking chewy cookies but only yesterday manage to make it when there is a request from princess A. She was craving for cookies at night 9pm and if the ingredient not enough, it is also too late to go to supermarket.
                So after checking the ingredient on this recipe http://allrecipes.com/Recipe/Chewy-Chocolate-Cookies-I/Detail.aspx?event8=1&prop24=SR_Thumb&e11=chocolate%20chewy%20cookie&e8=Quick%20Search&event10=1&e7=Home%20Page&soid=sr_results_p1i1 I decided to make it.

                Here is the original recipe (source from allrecipes.com):
                Ingredients     1 1/4 cups butter, softened
                    2 cups white sugar
                    2 eggs
                    2 teaspoons vanilla extract
                    2 cups all-purpose flour
                    3/4 cup unsweetened cocoa powder
                    1 teaspoon baking soda
                    1/2 teaspoon salt
                    2 cups semisweet chocolate chips

                Directions

                    Preheat oven to 350 degrees F (175 degrees C).
                    In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Sift together the flour, cocoa, baking soda, and salt; stir into the creamed mixture. Mix in the chocolate chips. Drop dough by teaspoonfuls onto ungreased cookie sheets.
                    Bake 8 to 9 minutes in the preheated oven. Cookies will be soft. Cool slightly on cookie sheet; remove from sheet onto wire rack to cool completely.

                And here is the one that I modified:

                (In the modified recipe, i use more butter, mix flour with wholemeal flour, slightly lower the sugar and omit the vanilla extract and chocolate chips.)
                Modified Ingredients:
                250gr unsalted butter, softened
                250gr sugar
                2 eggs
                220gr all-purpose flour
                40gr wholemeal flour
                96gr natural unsweetened cocoa powder
                1 tsp baking soda
                1/2 tsp salt
                sliced almond

                Directions:
                same with the original recipe except instead of mix in the sliced almond into the creamed mixture, i put the sliced almond on top of it.

                Minced meat veggie & Kering tempe

                Above is today's menu :) the top one is minced meat veggie and the bottom one is kering tempe manis (if translated to indonesia literally, it will be "sweet dry tempe" :P)

                My gals love these menu so much and this is a simple dish. So are you ready to make it? Here is the recipe.

                Minced meat veggie
                Ingredient:
                Sliced carrot
                Sliced french bean
                Brocolli
                Minced meat (can be chicken or pork)
                sliced garlic (2 clove)
                1/2 tsp salt
                1/2 tsp sugar
                100ml -150ml water
                The amount of each vegetable depends on your need.

                How to:
                1. stir fry garlic until fragrance.
                2. put in the meat and cook with medium to low heat. wait until it change color (means cooked)
                3. put in vegetables and mixed with the meat
                4. add half teaspoon of salt and half teaspoon of sugar
                5. add in 100ml water.

                Kering tempe manis
                Ingredient:
                3 pack of tempe (i bought from NTUC supermarket) -> cut like stick and deep fried
                1 pack of tofu / tahu (i used tau kwa) -> cut like stick and deep fried
                 a handful of peanut -> fried (alternative you can use a prepack peanut)
                3 lime leaves (sliced)
                2 salam leave
                4 tbsp sugar
                1 small round malacca sugar
                chilli (i omit it as my kids doesnt like chilli)

                ground spices:
                4 garlic
                6 shallots
                1/2 tsp salt

                How to:
                1. stir fry ground spices until fragance
                2. put in sliced lime leave and salam leave
                3. put in sugar
                4. add in water and wait until it's ticker
                5. mix it with the fried tempe, tahu / tofu, peanut.

                Sponge cake / chiffon cake

                I got new mold design and eager to try. I now it is said muffin mold but I want to make chiffon cake. ^_^ stubborn right?
                Anyway I tried, but the first attempt is not so success. The taste is good, but it's not fluffy like usual chiffon cake.
                I guess it is because I didn't really make the white egg stiff peak and I think because when I mixed the white egg to yolk mixture too long.
                So the next day I tried again, this time round, I managed to make the white egg stiff peak and fold the stiff white egg to yolk mixture using spatula. and taraaaaaaaaaaa the result is awesome.



                This is the recipe that I followed:

                Lesson learnt:
                1. cream of tar tar is needed to make the white egg stiff peak if you didn't mix the white egg and yolk egg straight away.
                2. you can mix the stiff peak white egg to yolk mixture using mixer but with lower speed and only in short time.

                Udang Goreng Mentega

                250 gr grey prawn
                2tbsp tamarin
                3 Pinches of salt
                butter to cook
                oil to cook

                How to:
                1. Marinate the grey prawn with tamarin and salt for 15 mins.
                2. Deep fry the prawn with oil and butter until the prawns turn to red colour
                3. Peel off the prawn skins

                Serves for 2 persons

                Stir-Fried Beef with Orange and Asparagus

                250 g beef fillet, sliced thinly
                2 tbsps olive oil
                2 cloves garlic, sliced thinly
                4 basil leaves
                1 pkt (200g) baby asparagus, ends trimmed
                1 small margarin orange, peeled and segmented
                sprinkling of chopped almond flakes

                Marinade:
                1 tsp ginger powder (available at supermarket)
                2 tsps Japanes steak sauce (available at Japanese supermarket, optional)
                0.5 tsp sugar
                1 tsp Mirin/Japanese sweet rice wine (available at supermarket)
                1 tsp pepper
                Pinch of salt
                1 tbsp cornflour

                How to:
                1. Combine beef with marinade. Set aside for 10 mins.
                2. Heat oil in a non-stick pan over a medium fire. Stir-fry garlic and basil leaves until fragant.
                3. Add marinated beef and asparagus and stir-fry for another 5 mins.
                4. Ad orange segments and toss lightly. Top with chopped almonds and serve with plain rice.
                Serves for 2 persons

                Tip: You can substitute mandarin orange with grapefruit. It tastes just as good with beef

                Crispy Squid with Spicy Chilli Sauce

                4 medium-sized squids, membrane removed and sliced into 1-cm rounds
                2 tsps sesame oil
                0.5 tsp sugar
                1 tsp lime juice
                0.5 tsp white pepper
                2 tbsps white wine
                4 tbsps olive oil
                3 tbsps tempura flour
                sliced kaffir lime to garnish
                1 red chilli, cut into long strips to garnish

                Spicy Chilli Sauce
                0.5 cup cold boiled water
                3 tbsps Thai chilli (buy bottled from supermarket)
                2 tsps fish sauce
                0.5 tsp sugar
                Handful fresh coriander, chopped

                How to
                1. Season squid with sesame oil, sugar, lime juice, pepper, and wine. Set aside for 15 mins.
                2. Heat about 2 tbsps olive oil in a pan over a medium fire. Coat squid in tempura flour. Do this in batches and shake off excess flour. When hot, pan-fry squid, also in batches until golden brown and crispy, about 5 mins. Pan-fry the rest of the squid using remaining oil.
                3. To prepare sauce, combine water, chilli sauce, fish sauce and sugar. Stir to mix well. Top with fresh coriander.
                4. Serve squid garnished with sliced lime and red chilli, with sauce on the side.

                Serves 4

                Tip: Do not overcook squid or it turns too rubbery to chew

                Honey-Glazed Chicken Wings

                12 chicken wings (use middle portion only)
                0.75 tbsp oyster sause
                2 tsps dark soy sauce
                1.5 tbsp honey
                1 tsp ground black pepper
                3 tsps fresh gingle juice (I changed it with sliced ginger--> small square)
                3 cloves garlic
                4 tbsp olive oil
                Thinly sliced spring onions and red chilli to garnish (you can skip red chilli)

                How To:
                1. Marinate chicken with oyster sauce, soy sauce, honey, pepper, ginger juice and garlic. Set aside for 10 mins.
                2. Preheat oven at 180C. Meanwhile heat oil in a non-stick pan over medium fire. Lightly pan-fry chicken for 3 mins or until chicken turns light brown.
                3. Remove and place chicken wings on a baking tray. Bake in the oven for 20 mins. Reserve marinade.
                4. Put reserved marinade in a pan and heat over medium fire until liquid is halved and thick. Set aside.
                5. Once chicken is ready, remove from oven and brush with thickened marinade. Serve immediately, topped with spring onions and chilli.

                Serves for 4 person.

                Tip:

                1. If you don't have oven, you can fry the chicken with medium fire until chicken turns light brown.
                2. You can skip step 2 and bake/grill the chicken wings completely for a healthier, non-oily option.
                3. To replace chicken wings, you can use chicken thight

                Ayam Goreng Mentega

                Got this recipe from my xColleague Widie. This is her son's favourite.

                Ingredients:
                Garlic
                Red Chili
                Pepper
                Sesame Oil
                Woschester Oil
                MSG (I prefer not use this, usually I change it with the portion of salt n sugar ^^)
                salt
                Soya sauce
                Margarin
                Chicken
                jeruk nipis
                lime

                How to cook:
                1. Sliced chicken clean and marinated it with jeruk nipis n salt.
                2. didihkan air, lalu masukkan ayam ke dlmnya, angkat tiriskan, grg ayam dlm minyak yg diberi mentega sebentar kmd angkat
                3. stir fry onion with sesame oil then add garlic, chili and other spices till smell nice
                4. add chicken#2 till colour changed and add some water and cook it till the color browned.
                5. Serve it with lime

                Note: while marinated use jeruk nipis to dismiss the uneasy smell of chicken
                while serving use lime to make it smell nice and delicious

                Hisit#2 ala MayaNovel

                This time I don't use chicken. I use sea creatures "sea cucumber" (^^ hehehehe) and water chestnut plus egg. Can't wait to write it down. Let's start it!!!

                Ingredients:
                2 cloves diced onion
                2 cloves diced garlic
                2 cm ginger (flatten/bruise/memarkan)
                some pinches salt + sugar + pepper
                100 gr sea cucumber
                250 gr hisit
                8 water chestnut
                3 tbsp corn flour / maizena
                2 egg (mixed it)

                How to cook:
                1. stir fry onion, garlic and ginger till smell nice
                2. add sea cucumber + water chestnut to #1 till colour changed
                3. add 500ml water till half boiled
                4. add hisit to #3 plus salt, sugar and pepper
                5. after boiled, slowly add the eggs into the soup (you need to stir the soup as well)
                6. from #5 add the corn flour that already blend with some of the soup --> the soup will become thicken
                7. Serves for 2-3 pupil

                Tom Yam ala MayaNovel

                2 medium cuttlefish (sliced)
                5 grey prawn
                3 oyster mushroom
                1 lemon grass (diced around 0.5cm - 1cm)
                4-5 lime
                3 cm ginger
                pinches of salt n sugar
                3 dried red chili
                1/4 red paprika
                1/4 yellow paprika
                1/2 garlic diced
                1 scallot
                2 onion
                1/2 tomato (slice in thin diced --> not very thin)

                1. stir fry jahe, red chili, garlic, onion, scallot, salt till smell nice
                2. add prawn, cuttlefish and mushroom to #1 until the colour is changed
                3. add 500ml water till it boiled then add lemon grass + lime extract + paprika + + tomato + salt + sugar
                4. When the taste is mixed between sour+hot+sweet then it's ok lar. Wait till it boil and you can serve it for 1 person. ^^

                Chicken Drumlet

                Ingredients:
                8 Chicken drumlet
                1 tbsp honey
                20 gr ginger strips
                1 tbsp hoisin sauce
                2 tbsp soy sauce
                2 tbsp chinese wine

                Garnish:
                5 gr coriander leaves
                5 gr toasted sesame seed
                10 gr cooked corn

                How to cook:
                1. combine all the ingredients together except the garnishes. Leave it to marinate overnight
                2. Heat up the oven @ 170C and bake the drumlet for 10'
                3. Garnish & Serve
